I think Immich has grown out of the most difficult upgrades now. Most changes now are just removing lines from the stack.
I love this app.
I highly recommend using Docker/Podman, even though you say you don’t want to. It is trivial to start up a new service using docker-compose once you get the basics down.

No. MeTube only loads correctly after clearing the cookies and forcing me to re-login to Authentik. Even if I manually log out and try MeTube again, it doesn’t work. Only clearing cookies fixes it temporarily.
The other apps authenticate and load correctly every time.
Aside from the technical explanation that others have given, here’s how I use Docker:
MeTube to rip videos and stuff easily. Just plug in a link and most times it’ll work. Here’s a list of all the supported sites.
I use Sonarr/Radarr and qBittorrent with gluetun to search for and download TV and movies that I watch on Plex.
I host my own Immich server that will automatically back up my photos from my phone just like Google Photos, except I own it all and it’s all kept private. It has its own machine learning and facial recognition, so I can search for “dog” and get all the pictures of my dogs, or I can search by person.
I use Docker for all this because the images come in little prepackaged containers. It’s super easy to get into once you figure out some of the basics.
Another great benefit of these containers is that you can transfer it to another system if needed. Just copy the config and data over to the new system and point the container in the right direction and it’ll pick up where it left off.

Seconding the other user’s post, it’s just storage. You can use it temporarily for the Plex server but I highly recommend offloading that task to a real computer.
A used Optiplex is usually the go-to because it’s low power and capable of doing the job. Just make sure it has enough RAM to handle the containers you wanna put on it.
Docker is a little bit of learning but you’ll get the hang of it. I found docker-compose to be much easier to learn. Portainer or Dockge can help by giving you a GUI, if that’s your preferred style (like me).

Is there a simple way to turn this into a persistent notepad among all computers? So if I access this on my phone it shows the same as what was on my computer?
I don’t think it monitors stuff consistently, or if it does, I don’t know how to utilize it.
I like MeTube. It can download from a ton of sources, not just YouTube.
I use it all the time to rip videos from tiktok or Instagram whenever my friends share something with me, since I don’t use those services.
For something like a Plex server, Intel is better because of QSV.
Signal dropping SMS support is just so confusing. Keep SMS until many people have converted. You can always remove SMS later when it finally fades away.
SMS support was dropped because people were using Signal thinking their conversations were encrypted and it was only through unencrypted SMS. It’s hard to sell the privacy part of Signal when it’s not actually guaranteed, so they got rid of that.
sqlite should be okay but redis helps with loading. It caches pages or something, basically does all the work of building the web pages before they’re actually requested so it isn’t done on the fly.
My Nextcloud set up on my i5-4690k was painfully slow as well because I didn’t have redis. I never got it set up properly and gave up.
